Bobby’s Slimming Salad
My fitness trainer, Bobby Cox, tells his clients to eat this salad with grilled fish for dinner. He said it’s very effective at getting rid of unwanted pounds. I made it and it’s easy to make and tasty. I love the vinaigrette and I’m super picky when it comes to salad dressing!
Thinly sliced purple cabbage (it has more nutrients than green cabbage)
Thinly sliced red, yellow or orange bell pepper
Peeled and sliced cucumber
Chopped firm tomato
Thinly sliced small bunch of radishes
bunch washed torn baby spinach leaves
¼ inch slices of washed bok choy (the leaves are bitter so it’s your option to keep or omit them)
raw broccoli, chopped in small pieces
¼ cup apple cider vinegar
¼ cup olive oil
2-3 TBSP honey-mustard
Splash of fresh lemon juice
Salt and pepper to taste
Toss salad ingredients in a large bowl. Mix vinegar, oil, honey-mustard, lemon juice, and salt and pepper in a small food processor until thoroughly mixed so the oil doesn’t separate. Drizzle honey-mustard dressing over salad. Top with grilled fish.
