gluten-free vegan berry millet breakfast bowl

I wanted a breakfast or a sugar-free snack that I didn’t have to cook, that would be really fast and easy to make, and be healthy so I came up with this gluten-free vegan berry millet breakfast bowl. I prefer the blueberries be frozen since it gives it a nice crunch. You can use currants instead of the blueberries which gives it sweetness. The strawberries, coconut flakes, hemp seeds, and goji berries are optional but a tasty addition. Make sure not to add any liquid, otherwise the millet won’t keep its texture.

 

3/4 cup puffed millet

A pinch of vanilla powder

1 TBSP goji berries

1 TBSP hemp seeds

1/4 cup frozen blueberries (thawed in bowl for 5 minutes) or 2 TBSP currants

3/4 TBSP dried unsweetened coconut flakes (optional)

3 sliced fresh strawberries (dry off any water)

1 TBSP chopped walnuts/almonds (optional)

 

Mix all gently with a spoon and enjoy. That’s it!
