Persimmon Smoothie

This is my new favorite smoothie. It’s raw, vegan, has only two ingredients, is sweet without any sugar, and creamy without dairy or fat.

Two Ingredient Vegan Persimmon Smoothie

2 ripe Japanese persimmons, peeled and chopped

1 1/4 cup unsweetened So Delicious vanilla coconut milk

Freeze the chopped persimmons until frozen. (Freezing the fruit turns your beverage into a creamy smoothie instead of just a yummy drink). Break apart the frozen persimmon chunks and toss in your heavy-duty blender or Ninja cup. Add coconut milk and mix until smooth. If you want to add protein powder, just make sure to use plain protein powder to ensure it doesn’t overpower the sweet unique flavor of the persimmons.

292 calories and 51 net grams of carbs

Note: Check the price of the persimmons. I paid $3 for each persimmon and bought six of them. Ouch! I thought it was $3.00 a pound.

It was still worth it; I figure it’s about as much as a smoothie I would buy at Jamba Juice, except mine is better and organic.
