Fit Girl Crock Pot Paleo Lamb Stew
This lamb stew is really easy to make, is dairy-free, gluten-free and lower in fat than your traditional meat stew because you don’t fry the lamb first. I use lamb because it has fewer antibiotics and is more easily broken down than beef…it also tastes better.
Fit Girl Crock Pot Paleo Lamb Stew
1 1/2 pounds of lamb stew meat cut into 1 ½ inch chunks with visible fat removed
5 carrots, peeled and sliced into ¼ inch rounds
½ cup chicken stock
1 can tomato sauce
Salt, black pepper and cayenne to taste
Small bag washed spinach
½ cup kalmata olives with juice
Put all ingredients except for spinach and olives into crock pot on low and cook for 8 hours. The last 15 minutes, add the spinach, ½ cup olives including the juice from the Kalamata jar (basically, don’t drain the juice out after you put the olives in) and stir. Pour 2 ladles into bowl and top with a sprinkle of sea salt. That’s it!
