Cut rice calories with oil and time

When I read that the calories in rice may be reduced by half by boiling water, adding 2 tsp of coconut oil to that cooking water for every cup of rice, and then cooling it in the fridge for 12 hours, I had to try it! It actually tastes the same after I re-heated it, and, yet, has fewer calories…I’m doing this from now on!

Supposedly, “the cooling process along with the fat from the oil” increases “resistant starch, an indigestible carb (1)”. The way to think of this is, like fiber, your body cannot break it down, so it gets eliminated. Move over quinoa, rice is back!
