Steamed Potatoes with Mustard Vinaigrette
2 lbs red potatoes, quartered
- 1 Tbsp olive oil
- 3 Tbsp apple cider vinegar
- 2 T grainy mustard
- 3 Tbsp chopped fresh cilantro
- 1 Tbsp pickle relish
- Season with salt and pepper
Put potatoes in steamer for 20 minutes, until tender. Mix remaining ingredients in a small bowl. When potatoes are cooked, drain water, pour vinaigrette over potatoes, savings 2 tablespoons.
Right before serving, drizzle the remaining vinaigrette over potatoes. Serve hot.
