This is a light and delicate salad, that’s perfect on a hot day.

Goji Sweet Pea Salad

  • 4 Tablespoons Goji berries, soaked in 1/4 cup of room temperature water for 2 hours on countertop
  • 2 large handfuls of baby greens and sweet pea shoots (see salad boxed mix in photo)
  • chiffonade 1/4 cup fresh mint, stems removed
  • a few dashes of salt
  • a few twists of fresh ground black pepper
  • 1 Tablespoon olive oil
  • 2 Tablespoons raw pumpkin seeds

Divide the greens, sweet pea shoots and mint between two large plates, and top each with half the soaked and plumped Gogi berries. With the reserved Goji juice, add the salt, black pepper and olive oil, and stir with a spoon. Pour the the Goji berry dressing between the two salads. Top with pumpkin seeds. Serves 2
